After seeing thombrogan chip his edges on plastic cutting boards, I moused around and found the following. Has anyone tried these? - Buzz

Buff indeed! That's a big board. I don't know if its worth it though, $67 is allot for a big hunk O' rubber. That's about how much I paid for my 16"X16"X2.5" end grain bamboo board, which I really like, and also prolongs the edge, looks much nicer, and is as big as I need.
 
I have a 15x20x1/2 Sani-Tuff and I like it alot. It is quite soft and I'm sure easier on edges than edge-grain bamboo, or even poly. It is soft enough to cut quite easily if you use a serrated knife, and takes food stains more easily than poly. So after ~3 months of use mine is getting ugly but it does seem easy on the knives. I haven't checked to see if it's ok to bleach, will probably just wait until it's scored badly enough to sand. Not going to sand very often as at 1/2" thick it would not last long....would rather have had 3/4" thick but the supply store where I bought only stocked 1/2". I think my board was about $30.

One question I had when I first read about Sani-Tuff was rigidity....say "rubber" and I think flexible but the board is pretty stiff, maybe just a little more flex than a similar thickness poly board. And the matte rubber finish keeps it from sliding around on my slick granite countertop.

Aren't you concerned about bacteria growing in the cuts? Especially if you do not bleach it regularly?
 
When I worked in a pro restaurant, I think they used cutting boards identical to the ones first linked (boy, they were heavy, in any case.) They just tossed them in the steam cleaner/washing machine at the end of the day, and I think you can do the same (if they'll fit!) in your home dishwasher.

Then again, always check with grayer heads than mine before taking advice.
