I have a couple of these Seki Ryu knives, a Santoku and a Deba, I purchased from some local Japanese stores. I've never seen them anywhere else though and can't find anything on them on bladeforums. I'm wondering if anyone has any info, reviews, experience, etc. with these Seki Ryu knives. So far, they seem decent. Hold an edge decently well and easy to sharpen. Here is one of few links I could find on them (but not in english):

I've got exactly the same as shown above. Came crazy sharp out of the box, very easy to sharpen, and the blade makes nice TWANGGG.

The grind looks unusual to me. It's like hollow ground (at the very edge) combined with convex (slightly higher).

Paid about $25 for mine.

Nice to see another person with these knives. I got my Santoku for about $17, and my Deba for about the same also. They seem decent for the price. I'd just like to see if any others have had experience or knowledge of Seki Ryu kitchen knives.

Anyone know what type of steel it uses or have any other info?

I just bought a Seki Ryu from local Japanese foods market (JSR, any chance you also got yours from Mitsuwa at Venice & Centinela?) and went Googling for hits on this brand name but I'm mostly finding karate sites. However I did get a hit on this very thread! I bought the sashimi knife ( http://www.sushi-shop.pl/images/sr400.jpg ), because I've already got some other santokus (non Seki Ryu) and because I'm also getting interested in making sushi at home. Just a few days before I had been looking at a nice sashimi knife at Surfas Restaurant Supply which was about $82 if I remember correctly. I passed on it and what do you know -- I found this one for $17.

Great find Misha! I tried googling also and I couldn't find anything (well, aside from those karate sites you mentioned). I didn't buy mine from Mitsuwa (tho I have seen them at both Mitsuwa and Marukai), I got one of mine from a japanese store in the Puente Hills Mall, and the other knife from Home Shopping Korea store in Industry.

I guess these aren't very popular, at least in the US. Nice to see there's a lot more knives that Seki Ryu offers...wish the japanese markets carried all of those and the accessories.

An older thread, but I was searching, and had to ask... The handles of these knives are replaceable, it seems from the website. Have you had any problems with the knife not being full-tang, or does the handle thread deeply into the handle for support? I am looking to get my hands on a great Nakiri for a reasonable price.
