I am thinking of a Practical Waki or Ko Katana or Cheness SGC. My big concern is can I use my DMT Fine Stone to sharpen like I would do with my bowie knives or do I need to sharpen it the traditional Japanese way?
I can hardly believe how inexpensive those are...
These blade styles should have a convex zero-grind. Let's assume it comes that way.
I routinely sharpen my chopper that I made with that type of grind using my DMT, so I would say yes you can at least touch it up after use.
I wouldn't waste time doing much beyond that as these are not high quality presentation pieces.
You can beat the Cheness any way you want, that steep & wide bevel will cut all day. I've used steel blocks to sharpen the Gozas to near razor. The Hanwei I don't know about, never bought one.
