Sharpening the Surefire Echo

It sounds like the knife has a chisel edge. Sharpened on one side, nearly flat on the other. Best way I have found (using a stone) is to rock the edge know the stone until you feel that flat spot and sharpen it out. You should only need one stroke on the back side for every ten or so on the ground side.

Look up sharpening chisel grinds if you didn't find what I said helpful. There are tons for YouTube videos on it.
 
I learned angles through experience. Set the knife vertically, then half the angle. That is 45. Half that to around 20. The chisel grind on your knife is likely around 25 on the face and near 0 on the back. That is where I have seen most chisel grinds at.
 
Honestly, a protractor (or is it compass) could help too. Use it to learn around where 15, 20, 30, and 40 are.
 
... with a true chisel grind just sharpen the knife like one would with a "normal" double bevel, but just sharpen the side that came sharpened, and not the flat side. Am I correct in this interpretation?

Correct, but ... once you've sharpened the bevel, you will need to remove the burr from the flat side. A few strokes on the flat will smooth that edge off nicely.
