Anyone have any idea of what the shelf life would be on dried beans, flour, pasta, rice or rice mixes, etc or similiar types of dried foods that are vacuum sealed with a home vacuum system. I've been sealing a lot of things lately for emergencies. It seems like something like dried beans would last forever.

Oxygen and heat are the things that destroy food . Dried beans ,rice, wheat [not flour] that are commercially packed in nitrogen should last at least 5 years .DIY vacuum packaging I would say 2 years . In any case it's always a good idea to rotate food supplies.

I have been eating rice I stored in food grade buckets for Y2k. Remember that? I use it whenever I need long grain for spanish rice. It is perfectly fine. I store it in my basement where it stays about 62 degrees year round.

Also used up beans a few years later from the same storage batch with good results, so your vacuum sealing should last you much longer than my stuff.

Check some of the survivalist sites for more info. There's still lots left over from Y2K.
