Sunday dinner consisted of

Tomato and Mozzarella, red peppercorns freshly ground..sublime, along with fresh basil growing on the side of the house.

Overall a great meal helped by some great knives. Great heft, razor sharp, beautiful wood, neat pins marking his and hers. Very satisfied with initial use, they will give a lifetime of service cutting Poultry, Steaks and Chops, grilled and smoked along with the stray vegetable and salad to start each meal.
 
I used mine for brisket duty the other day. I put a stupid sick edge on it and my kitchen knives just weren't cutting it properly. Trimmed a 16 lber and a bunch more. Obligatory pics

Brisket today was amazing. Well worth the time. Burnt ends came out top notch. Could have sat in the heat to caramelized a bit more but they were all gone so must not have been an issue.

You see the kitchen knife in the first pic and it was really lacking performance wise.

















 
looking good, you know you have a good knife when you can't stop using it, taking pictures of it is a buy product of the knifenut addiction I think, but can't be a bad sign ;)
 
You're going to have to imagine what was on my plate. Pork Tenderloin, roasted broccoli, heirloom cherry tomato and mozzarella salad, Trader Joe's Quinoa salad.

Mine has become my favorite eating utensil. I use it at nearly every meal.

The tomatoes with mozzarella and basil is one of my favorite snack foods. Great stuff. I've got to get me one of those worker knives.
 
I like the little bit longer handle to improve function. Very nice.
