Skinning Knife...

Years ago when I started hunting, someone gave ma a "Field and Stream" field dressing kit. I never killed a deer so I never used it ( have not even gone hunting in the last five years since my oldest son was born). Yesterday we had one of our cattle butchered and I decided to keep the hide and try making a rug. I quickly found out while fleshing it that the knives in that field dressing kit are total crap. I was sharpening the knife every few minutes. I have good boning knives and filet knives (mostly Vitrinox) that I use on small game and small farm animals such as rabbits and chickens. I want to start hunting again and will be butchering a pig myself in a couple months so I want to buy a good skinning knife. A gut hook on the back would be nice bot not needed. I am thinking $125 max though it would be nice if it was less. A friend was suggesting Cutco and another Silver Stag. What are your recommendations? Thank you.
 
I've never really had any use for a gut hook when processing game. My two favorite blades for skinning deer are the vintage made in the USA Old Timer 152 Sharpfinger and the Cold Steel Master Hunter in Carbon V also made in the USA. If you are vigilant you might be able to get one of each for less than your budget. I believe both are discontinued but fairly common on the secondary market.
 
Get a Buck Vanguard. I use the model with the rubber grip and nylon sheath. It runs $45 to $55.

Russell Green River skinner. Light, handy, inexpensive, time-proven, and effective.
 
I'll be honest, it's been some time since I've skinned anything. However there are a couple of knives I like the looks of.

First is the Tops 'Quick Skin'

The other has a built in gut hook. the 'Backwoods Skinner'

HESS Knifeworks out of Gladestone, Michigan makes what you are looking for. Many on-line venders sell them. Great Eastern Cutlery makes the blades.

This Hess Pioneer (they make several other hunting knives) was recently gifted to me by a very generous BF member.

About a year and a half ago, I gave away this Hess Whitetail to a co-worker who was just beginning to take and teach his young son deer hunting.
