Up for sale, this western 180 x 53mm Gyuto with hand stitched leather saya / sheath.
52100 carbon steel at 62 hardness. Sharp as can be and will hold an edge well.
This is a fairly thin convex grind, but should stand up well on the line or in the home kitchen.
A very nice piece of premium ironwood for the handle, with brass corby bolts.
Hand finished to 1200 grit. Rounded spine for comfort.
