Hello Everyone,
I have one of my 8” Nakiri available today, made from 8670 high carbon steel with black micarta handles. The knife is only 1/16” thick at the spine and has a thin single bevel hollow grind for right hand use. The secondary bevel is still ground and can be sharpened in both sides to help balance the cut and can be adjusted by the way the knife is sharpened in use. The light knife with a thin grind is perfect for cutting vegetables and doing food prep for extended amounts of time.
