The Dublin is my take on the perfect meat processing blade. Inspired by a heavily patinaed butcher knife that came into my shop for sharpening, I instantly fell in love with the classic lines and no-nonsense ability to slice. I made some changes to make it my own, and have been loving it ever since. My personal Dublin is the most used knife in my kitchen. I love it for cleaning up tenderloins, or chicken breasts. It's also great at slicing some venison sausage at deer camp.
