Hi folks!
Here is my latest Santoku - this one has a double bevel edge (western style) and will suit a left or right handed person. The handle is a traditional 'Wa' style with bolster (front) and pommel (back) in buffalo horn with brass and vulcanised fibre spacers around a Goldfield centre (precious wood that is ethically sourced in Australia). It has been hand polished and oiled to show off it's natural color, chatoyance and intricate burl pattern. This Santoku comes with a 'saya' style sheath made of oak and lined with chamois leather to give the blade a snug, plush fit.
SPECIFICATIONS
Blade: Böhler N690 Stainless Steel (HRC +/- 59)
Blade thickness at spine: 2.3mm (0.09")
Blade length: 168mm (6.6")
Overall length: 297mm (11.7")
Handle material: Buffalo horn and oiled Goldfield
Fittings: Brass mosaic pin in pommel
