Which would you pick of these two?

Or would you go with something else?

$600 cap. Must be a non-flipper.
 
Both very similar almost to the tee but the lack of a sharpening choil on the Harsey and the hex screws on the CRK seal the decision for me.
 
I like the beefy construction of the SHF. But the Sebenza is tried and true. And CRK quality/F&F speaks for itself.
 
Every Spartan I’ve handled is ground extremely thick. If you need a slicer go with the Sebenza.
 
You've saved $600, save another $600, buy both, go broke AF & try em both out. Both knives hold their resale value.

Did I mention this hobby is a sickness?

I'd have to agree. The many different CGG designs available on the Sebenza make it very appealing. But the new 2018 limited edition SHF's look sweet too with plenty of anodizing. Just not sure if the SHF has the same or similar level of quality as CRK.
 
Having CRK’s already, I have no desire to find a knife compatible to a CRK. That in itself limits me from experiencing other great knives. I can live with that because once I find something that works for me, I see no need to change. It’s like having a favorite restaurant, once you find that one meal that satisfies all you taste buds, it’s hard not to keep ordering it even though everything on the menu looks delicious.
When Spartan first came out with their folders, I talked to a couple of dealers that put them as good as CRK’s. As tempting as it sounded, I never did try one.
I’ve never read anything negative about Spartan Blades, and if I didn’t own CRK’s, I’d definitely get a Spartan just to check it out. It’s a sweet looking knife.
 
I'm surprised I didn't see this above, maybe I missed it, but an Umnumzaan would make a great middle ground.

I voted for the large 21. It's what I'd buy. The Umnumzaan though is bulletproof without the performance faults of the SHF. I love the look of the SHF and if they ever make a version with thinner stock or a CRK-esque grind I'll buy one. Until then it's just too damn thick.
 
I personally like design of the Harsey more but I like the 21s too. You might want to take a look at a micarta inlaid Inkosi as well. It feels like a middle ground between the 2.
 
The Spartan Harsey has the hard use look and is a bit bigger, but from experience you could buy 10 and only like 4 of them. I feel like some of the youtuber’s get great action out of the box, but I haven’t seen it yet. Some quality issues for sure. CRK, they just dont leave the shop unless they are amazing. And they are bigger than they carry. I have both, i would buy another CRK, Spartan...ehhhhhh.
