Steak knife set

I want to get at least 6, if not 8 or 10 steak knives depending on cost.

I don't know what I'm looking for other than very good quality with out breaking the bank. I don't need designer knives, but do want something that is high quality & will last a life time.

I am looking for a damascus chefs knife, out of curiosity, are there ever any sets of damascus steak knives?

Also, why do the current Farberwear steak knives from walmart I have have rust all over their blades from going in the dishwasher? I want knives that will not give me this issue. I use my dishwasher daily & need something that can be easily used with it.

I would also prefer American made and would consider German steel as a close 2nd. (I know some will argue they are 1st)
 
Japanese knives are highest quality, then german.

There are lots of damascus steak knives, most being cheap, the rest is very expensive.

I would suggest wustof, it's not damascus but they are dishwasher safe and fairly cheap.
 
Yeah I do realize Japanese blades are some of the best in the world, but I love buying American with things like this. I have recently been buying All-Clad stainless steel american made pans. They are the best in the world if you ask me.

I'd really like to find a high quality American made stainless steel or damascus set.
 
trick is that pricing gets a bit wild after you step up from production blades
there are many custom makers that coudl help you but im not sure what your price range is (there are some really nice mono steel sets out there )

and no good knife should ever go in the dishwasher
 
I like buying American too, only if it's really good. Like my Idaho made folders.

But in the kitchen world, Japanese knives sort of dominate.
 
I just found out All-Clad sells a stainless steel series of kitchen knives & I would buy them in a heartbeat as I love that company but the handles are wooden which means no dishwasher.

I like throwing all dishes in the dishwasher & being done with it. So I'm really leaning towards a stainless steel knife set over a damascus of any kind.
 
just looked at some of the links and if you want to spend 150 a piece like the ones i saw let me know since thats what i charge and you get real wood
i offer discount on 4 and 6 knife sets (working on a set of 4 and 6 right now that are ordered 4 piece getting amboyna burl and 6 is high grade curly koa )

i am backordered right now but coudl put you on the list. i am thinking aobut having 50 water jet cut down the road to see if i can get the cost down that way
 
Are you in the market more for looks, or for cutting performance? Wood handles are kind of out of the question if you want to put them in the dishwasher, so that changes things from a production knife perspective. Custom?

I happen to like Oneida "precision cut utility" knives as steak knives because they fit my hand well and cut medium rare steak just fine. They do well done chops just fine as well. I really like them for an all around kitchen knife. I think they do the job of a paring knife very well. Then again, I'm not a pro chef. I'm sure there's better out there. Nevertheless, I would happily fill up a block with them and be happy. Ten of them would be $70, give or take.
 
OP wants to avoid wood handles as he prefers to dishwasher his knives...
thought about that after the fact
some of the links had that paka wood stuff on utility knives that were priced at 150 each (i was stunned )
dishwasher is jsut aobut the worst thing anyone could do to a knife they had even nice thoughts of as its hell on the blades
