Recommendation? Surface grinding services?

Hey everyone, I just got some 440-C the other day from NJSB to make some fillet knives out of. However I made the mistake of not order the surface ground option and when I got the steel that's when I realized it has "pitting" on the surface. It is also to thick for me at .100 I want it to be at .080. I have a 2x42 with a glass platen but any time at my experience level that I try to surface grind something longer than 5" it ends up uneven and with high and low spots.

So my question is where can I send it to have it surfaced ground? Or should I just buy new stock and start over?

I don't know anywhere that they sell .080 stock. I know that .060 is available but I feel that it would be to thin for my purposes. My fear with having .060 is that after it is beveled and such, the tip would be to weak to pierce through the scales of the fish. The fillet knife that I am after is going to be a 7" fillet mainly for cleaning Redfish and other brackish water fish.
 
Alpha Knife Supply sells it in 0.08". I don't know if their 440-C has any pitting (it is listed as hot rolled, descaled, annealed). I've been happy with the steel I've bought from them so far. They also have 0.083" flat ground stock on the same page.
 
If you don't want to order more, you could profile the knife, then grind it down to ~.080 with 36grit ceramic and clean it up nice and flat on a disc sander.

That's where I am at currently. All 3 blanks are profiled and I started to try and grind down one of them but it just makes me nervous.

Do you have a holding magnet? If you don't, you should get one before starting.
