MEAT: Your maker!

I just completed this odd looking knife for our local butcher, and delivered it today. The strange shape is the result of a leftover piece of A2 I had kicking around, and although I'm not sure he's convinced it'll work for him, my fingers are crossed that it will.

The mortised handle is purple heart, (one of his favourite types of wood) and the spacers and liner are vulcanized fiber. The guard and pommel are also A2. I left the spine unfinished because I liked the look of the colouring left by my heat treatment.

This knife was a real challenge for this rookie, but I'm pretty happy with the way it turned out. I left it rough around the edges- it's a working tool and I have lots of other projects in the works that I need to focus on. At this early stage in my knife making career, I'm not going to be too hard on myself for falling short of perfection :)

I really like the belly on that thing, and there is something about purpleheart that is always attractive, when it is the right piece - such as this one.

it's funny, but the one thing that Edward, (the Meat Smith) is the most skeptical about is the belly of this knife. I explained that, because the knife is so thick (8mm), the belly section provides the best geometry for cutting. It's a nice stiff blade which should do a number on ribs, joints etc.

I left it with him for testing, so we'll see how it works out. Haven't taken payment for this knife, but I'm hoping it's worth its weight in prosciutto!

I'll update this thread with more details as they come...
 
Its a beauty. Love the lines!!!! Nice looking handle job too!.... I'd be a happy customer.
 
just got back from Edward's place- he told me he hasn't used another knife for the past week! Pork shoulders, turkeys, bacon etc etc he told me this knife is doing what it's supposed to

When he first looked at this thing, he wasn't convinced it would do the trick. He even said it took some getting used to...but once he got the hang of it, well let's just say he's happy and that the knife is pulling more than its weight in the shop

Looks like we'll have a regular supply of meats and cheeses coming for months!

just got back from Black Market Meats...Edward told me not to let this get to my head, (of course, it did!) but he has yet to have to sharpen his new knife- he said 'it holds an edge forever'. He also told me it's become his favourite, (out of 80 some odd knives he has) which of course also went to my head. I'm just so jazzed to have created a tool that's so appreciated. Also jazzed to have picked up another load of delicious goodies! Cured meats, cheeses and an inflated ego- today has been a great day and it's only halfway over😁
