The Companies that Bring us Knife Steel

I am impressed you round up all the good places in Europe as well! Including my favourite SI Knives here in Sweden

Typically, 50100 has 1% carbon with 50 points of chrome and 20 points of vanadium. It is a cutlery steel used by WR Case and others. It is the same steel as 1095CV. CV=chrome vanadium. It’s a very good steel, it has finer grain and is deeper hardening than regular 1095. 5XXX steels are low alloy steels alloyed with chromium.

It would be interesting to see how it works for a hamon. Low Mn, but about 30 points of other things.
