Who makes the best production knives in traditional high carbon steel? It seems everything is stainless today and i'm looking for something that is as close steel wise and material wise to what my grandfather and father used to carry. Thanks

EYE BRAND of traditional pocketknives. All I have had excellent high carbon steel that takes and holds a very keen edge. Also, they have an old timey look about them that I find most appealing.
Another good choice is the relatively new line of pocketknives from COLD STEEL. These have the COLD STEEL CARBON V blades and all three of mine came with excellent edges that held that edge very well and re-sharpened easily when they needed it. Their 4" stockman is one of my favorite carry knives.

Lots of choices, although some take a little shopping. Schrade Old Timers in 1095 carbon steel can still be had, probably your best bet for selection would be ebay, but prices are going up steadily since they went under. Case makes several of their amber bone series in their carbon steel, which they call Chrome Vanadium or CV for short. I have a medium stockman in CV and its a very nice knife. Boker still makes carbon bladed slipjoints with natural scale materials, as do Bulldog, Buck Creek, and the aformentioned Eye brand. Camillus makes a few traditional patterns in carbon steel with derlin scales, good knives that don't get mentioned much. Queen has a large selection of knives in D2 steel with wood or bonestag scales, lots of folks swear by these. I would check SMKW to check out some of these brands and the patterns available, should find something you like. Lots of older stuff on ebay, but be prepared to bid high on the minty stuff if you find a nice one you like.

Boker, schrade OT (what you can still find out there), edge brand, boker (some), Case cv (cv was cases original blade material before surgical steel, and it is still used of course on a few, namely on amber bone, or yellow delrin, they also make some surgical ones in these materials, so make sure you buy the right ones, the cv is a carbon steel plated with chrome), buck creek, bulldog, camillus (makes a few in delkrin), cold steel makes a few tradtionals in their carbon v (I believe), queen makes some working knives in D2 (better than carbon steel, but harder to sharpen), kissing crane makes some (not many), Hen and rooster (use to, not sure if they do now).
