i have the above sharpener by Ezesharp . It appears to change angles on the flip as a novice trying to produce a good edge is this an issue with this unit . Thanks

Why do you think the angle is changing? What are you seeing that makes you think it's changing? I'd suggest verifying that there either is or isn't an angle change before anything else. You can use a digital angle cube to confirm the angle of the stone from horizontal (0 degrees) as it lays on the bevel of the knife. Measure both sides. That should tell you whether it's changing angles when you flip the knife over.
 
The blade are very sharp but I have checked the angle and on the flip the set angle is 15 and the opposite angle is 8 . This is fixed and cannot be adjusted . Is this an issue it’s not as long as I always set my knives in the same initial position . I have emailed the manufacturer no answer at the present .
