Victorian Era Butcher Knives

I recently had this set made based off of Bill "The Butcher" from Gangs of New York. There's obviously a cleaver here, the large one I've researched to be a generic 'butcher's blade', but I'm looking for a name and purpose of the smaller one. In the movie he ominously taps his glass eye with it and uses it to slice basically raw meat as he's eating it. Is this just an old school small section slicing knife? (They made it a bit wider than it should be)

It looks like a butcher that's been used heavily, sharpened over and over again, probably repurposed as a boning knife like bmcanally suggested.
