what do you use for a steak knife?

I have noticed that my love of folding knives is now crossing over to the kitchen. The dinner or steak knife is an opportunity to use a great knife every day. wondering what other people are using. Suggestions are welcome.
I am looking at the shun higo nokami. $99. Thoughts?

I have no idea what owning a steak knife has to do with cooking or how to cook. Can you elaborate for us? Im a pretty decent "cook" myself, and I have a drawer full of them.
 
I am with you half way :thumbup: Me & my kids don't use knives on steak&lamb - teeth 'em up.

I've a large set of steak knives for those prefer to use them on seemingly everything on the table, including strawberries & spaghetti :p

Any stainless serrated steak knives with hardness around 59-60rc will do. Or for plain edge, best if hardness is 65+rc.
 
I am referring to the knife that you choose to cut the meat on your plate at the dinner table. Was that not clear? Typically it is referred to as a steak knife of dinner knife. I would like the opportunity to hold a nice knife in my hand while eating dinner. While almost any folder I have would do the trick, I would prefer to have a knife made for the dinner table. I think my kids may start looking at me strange if I start eating with Kwaiken flipper!
 
wow! Tough crowd here with the steak knife question. If Perceval is trendy, then they are early trend setters because they have been making the same knife designs for centuries.

How about a Fiddleback?

well seems offender is like if you cant cut it with a fork its not properly cooked...but I and others cook proper with less desirable cuts of meat or even veggies. and the use of a knife is more acceptable than the food sliding off plate inadvertently. the worst time this happened was at one of my first jobs at a farm and the food was edge of plate and when fork went thru the food was on my boss...I was 11.... but adults of many thoughts think experience comes natural...just my thoughts and maybe not intention of poster. By the way,
I would refrain from using folders to eat at the table with. While I will use a folder to snack on an apple etc if you can avoid a knife where food particles can get in the pivot and perhaps become unsanitary, its all the better.
 
Meals are to be enjoyed, and this forum is full of folks who know stuff that I'd like to know. A good steak is tasty. A sharp knife may help enjoy a good meal....

Lately I've been playing and using a pair of Northwoods brand Kuda paring knives for fun steak knives. I plan to finally choose between a set of Wusthof Classic steak knives, or something from Northwoods, later this year. The Japanese make some sweet knives, but I'm more familiar with the European style, and prefer a Sheeps foot blade.


In May, I also had fun using a Sheeps foot bladed GEC #15 slip joint for everything, including dining but excepting yard work. That was different, and I cleaned, lubed, and sharpened it as appropriate. Here is a pic from preparing dinner for our dog:

I used it on a steak, but as the steak was tasty and I was hungry, there are no pics. So, the above pics may help us imagine a tender steak being eaten via a sharp knife. ;)

well, i got this trc steak knife in elmax, however i disliked the tip so i reground it from this:

what type of edge did you put on these? i have a set nearing completion and im trying to figure out what the most durable yet easily to resharpen edge would be
 
I don't use steak knives and I'd only use non-serrated ones on meat served on a plank or similar, not on porcelain. There's a pub around here that has some well thought out steak knives that have a serrated belly and a plain edge on the straight part (which won't touch the plate). I've considered getting them, but I don't think I'd have much use for them. I just use my normal table knives, which are serrated, for everything that's eaten with a knife and fork. If the meat needs to be cut up, I cut it up on a cutting board with a kitchen knife before serving it.
