Who has a Meatcrafter?

I’ve been thinking about buying the basic model CPM154 and Santoprene Meatcrafter as a kitchen and grill knife. It would primarily be used for slicing brisket, carving ham, turkey, etc.

There are surprisingly few reviews and YouTube videos on this knife.

Anyone have one? Thoughts?
 
I bought an orange one and loved it and bought 3 more primarily for cutting up moose and other wild game. They are wicked sharp and I'm a big fan of CPM154 for ease of sharpening as well as good edge retention. Just don't hit the bones or pans, etc. and it'll hold up for a long time. You'll love it for carving ham or turkey!

I bought the same one for the wife as a kitchen knife. She loves it. Wicked sharp.

We liked it so much I bought the 15500-3 with the CPM S45VN blade and G10 handle. Have not had a need to use that one yet.
 
Great knife. I got one from my wife for a Christmas present last year. When she bought it, it was $124 as I remember, but the price keeps going up. I use it for breaking down game and cutting up meat for sausage. Really precise cutting for removing silver skin and trimming fat off meat. It is also a great choice trimming brisket or poultry. I credit the blade geometry and CPM154 for making short work of these these tasks. Think of it as a step up from a 6” Victorinox curved boning X50CrMoV15 knife which is a also really good functional knife. If you have the extra bucks and need, it’s a really nice upgrade.
