Wire Cheese Slicer

The wire cheese slicer that I have had for a number of years worked well. "T" shaped with an adjustable roller to set the slice thickness. The wire finally broke. It was not expensive, not real high quality.

Are there any high quality wire cheese slicers that I should look for?

I could probably buy some hard stainless steel wire and put a new wire in but I would prefer to purchase a good tool. Hopefully one that has replacement wires available.

Any input is most appreciated.

If GoodGrips makes one, it should be good and reasonably priced. For replacement wire, a guitar b or high e string should work.

Thanks for the input.

I did see the Bellemain when searching. Looks very much like mine. There is no name on mine so searching for replacement wires is difficult. I could buy a roll of hardened wire and make them but ...

OXO Good Grip does make a wire cheese slicer. Appears to be well designed. The saddle at the ends of the wire have a large radius that should reduce stress at that transition, compared to most that have a very tight radius. I do not see any way to adjust the thickness of the slice though. Not very expensive so I might just buy one.

I have a wire cheese slicer that is mounted to a board and is hinged. Works great for a large block of hard cheese to slice portions.

We went through a few brands some with replacement wires, some without. Gave up on them and now just use a steak or utility knife for blocks of cheese.

the one i got at the cabot cheese store in vermont works well

Threads like these seem to require mention of the crazy outliers, so here's a $750 Danish wire-slicer that emits slices with a consistent thickness:
