I know that this stuff is not at the "cutting edge" of cutlery. Wife got it as a gift from a special friend so I am a little stuck with it. It does not seem to get a very good edge and doesn't hold ANY edge for long. Maybe I don't know how to sharpen it but I have been muddling thru for more than 55 years. Not smart though.

Is there anything that can be done with this stuff to, say, temper it? Some secret process for sharpening it?

The knives nor the webpage tell what they are made from but only say "China" and I know they are stainless.

Throw them away?

Thanks,

John

Since they are a gift from a special friend to your wife, you can't just toss them. If the edge rolls the steel is too soft and you'll need to use a more obtuse microbevel to prevent rolling. A smooth butcher's steel can also help keep the edge aligned.

Given the low price of $40 for the whole set, it is no surprise that these are not the finest cutlery. Maybe you can invest in a single knife out of better steel and use it when you really need sharp. Does your wife care about sharpness? If not, then the Puck set will be fine for her and you can have your special knife when you do prep. If she does appreciate sharp knives, she will want your special blade to use for herself. Then maybe you can re-gift the Puck set to someone who does not care and who needs basic knives.

I just dipped into kitchen knives for a father's day present... China and stainless are never a good sign. I would recommend getting a mid sized chef knife from the kershaw shun series elite. They are made in japan and have powdered sg2 steel. The knife that came was the sharpest I have ever handled and I have collected knives since I was 5. You can hold a vegetable mid air and slice through it with ease. They are a bit pricey but worth it. Great knives are rarely cheap. I would start with one and get a spyderco sharpmaker to be able to easily touch up that edge whenever needed. I got mine at metrokitchen.com and got a hell of a deal. If you need anymore info shoot me an email.

Bill,

GREAT advice from you. Wifey has not a centilla of concern for the treatment of cutlery. She leaves it sit on the counter dirty and then puts it thru a dishwasher cycle. She ain't the type of 65 year old to learn any new tricks without a gun being pointed at one of her children. Taurus, all the way. I was setting myself up for grief, not unusual for me, by putting excellence that needs proper treatment in her hands. I use that Puck junk so I labor to keep it sharp enough to cut butter. Not good stuff.

I will buy a great Shun Elite for me and keep it up high as she is height challenged. Nathan has offered to give me driving instructions for my purchase. Any other that has a connection please chime in.

Thank you all,

John
