the expression to take the key to the fields means: to take one's freedom, to free oneself.
This expression dates from the 14th century.

It would seem that the equivalent in your country is: "to take off for the wild blue yonder".
Pierre-Yves Joyeux, the cutler who made this knife was employed in a cutlery factory, when he became independent he chose this expression as his "brand".

thanks, that makes good sense and appreciate the good history lesson. Cool knife too. Another similar expression is “Go West young man!” which I believe means Go and find your destiny, your way to make a success in life.
