I've probably spent half as much on bench stones, belt sharpeners, diamond stones, ceramic stones, and sharpening systems, over the years as I have on buying knives. I love sharpening my knives as much as I love fidgeting with them. I've gotten pretty good at hand sharpening over the years, but still struggle with maintaining perfect angles. The Edge Pro was the closest I got to having almost perfect edge bevels, but having to manually hold the knives, switching sides, changing stones, and adjusting the angle for each stone based on wear and stone thickness, I just went back to hand sharpening.
I just bought a Work Sharp Professional Precision Adjust, and wow, just wow. The clamping system holds the blade with no movement, and the holder rotates so you don't have to re-fixture the blade for each side. The diamond stones are the the same thickness (not like water stones after use), so once the angle is set, switching plates doesn't require reseting the angle. I am thrilled with the results I'm getting with this thing. Has anyone else used the Professional PA?
