Zwilling 31021 vs. 31070: Same steel in both models?

Greetings.

I realize the steel used in both models have been through the 'Friodur' process, which I believe is ice hardening, but do both product lines use the exact same steel? Outside of that possibility, about the only difference I can see is in the different handles.

Any input would be appreciated.

The heavier handle keeps the knife in hand with a relaxed grip. The lighter handle will allow faster intuitive cutting but you have to hold it to stop it from falling from your hand.
