For your consideration are two AEB-L kitchen knives.

Both come from .070" thick AEB-L and have been heat treated by Peter's Heat Treat to around 60 HRC.

The chef's knife is 13" OAL with an 8" blade, black micarta handle, epoxied and riveted with stainless 1/4" diameter corby rivets. Balance point is right at the index finger.

The paring knife is 7 3/4" OAL with a 3 1/2" blade, black micarta handle, epoxied and riveted with stainless 1/4" diamater corby rivets.

Both knives are extremely light weight, very thin, and very sharp. They've both been sharpened to a 20 degree inclusive angle.

Absolutely beautiful. I don't think I've seen better looking kitchen knives ever, and I have owned, handled, or at least examined a LOT.

I know $300 seems like a lot to some people, but even a Shun set costs around $200 and certainly isn't designed this well. If only I could...
 
Fantastic job and well-priced for each knife. This post makes me want to buy even when I have many knives in the same size. I agree with everything Capitalized said.

Lovin the parer, Aeb is stainless correct?

AEB-L is stainless, but it touches up fairly easily and takes a VERY fine edge.

The parer IS still available if you're interested. Let me know.

AEB-L is stainless, it's equivalent to 13c26 and is a very fine grain steel used for razor blades as it takes and holds a very keen edge. I wanted this set so bad, I just cannot justify it given how many kitchen knives I already have. If only I could start over again...
 
I know what you mean, but it is so tempting to get a duplicate for the duplicate.
