1095 - from a batch almost two years ago, I recently did some testing with it and was very impressed with the toughness... it has a thick edge but is nice and pointy.
O1 Chefs Knife! 1/16" thick, full flat double plungeless grind, distal taper
O1 Wakizashi - asymmetrical full flat grind, convex edge... nasty chopper! 3/16" thick and around 18" long
15n20 Chefs Knife same grind as the other, knocker pommel... .045" thin
5160 tanto - .25" thick, rounded spine!
5160 Shobu Zukuri Tanto - asymmetrical full flat double plungeless grind, rounded spine, blacked out! .36" thick!
I have a big Ti Tanto coming up too!
For scale the lower Chef's knife is 1' long...
