Can you explain to me why the open tubing? I'm being sincere, I don't know if there's a purpose to them in a kitchen knife. Your work looks great, just curious about tubing vs pins for a kitchen knife...
 
I bought one of Jeremy's chef knives about a month ago and it quickly became my go to knife. It feels very good in the hand, well designed and sharp as a laser. The blade thickness is spot on as it breezes through potatoes and carrots. You won't be disappointed. I like the beveled edge on the front edge of the scales on this particular one.
