Just finished these up....they made for a nice photo shoot.
Gyuto = 15" overall, 10" blade, 5" handle, S30V, 0.090" thick, hollow ground (both sides), natural micarta, brass corby bolts
Santoku = 12" overall, 7" blade, 5" handle, S30V, 0.090" thick, hollow ground (both sides), natural micarta, brass corby bolts
And, of course, sharp as a razor.
