I have several Spyderco kitchen knives. However I was recently sent on a search by my food-guru Dragon Lady to find a good boning knife. She is a big fan of Cooks Illustrated Magazine, a journal for the culinary inclined. Here are a couple of links that may be of interest. I ended up with a couple of Victorinox (Swiss Army) boning knives, one more flexible than the other. These have a fibrox non-slip handle and were the chefs' favorites over vastly more expensive German and Japanese knives.

Kitchen knives really take a beating compared to the pocket folder or hunting knife.
