Recommendation? TSPROF K03 bevel angle at 10 degrees?

The manufacturer claims it supports from 7 to 23 degrees.

Can someone please confirm it can sharpen a chef's knife (such as a gyuto) to 10 degrees? Please reply only if you owns a TSPROF and you have actually done that.

I'm asking because by looking at the pictures, it seems that the big cylinder may get in the way of sliding handle at low angle. I could be totally wrong though.

Yes - for acute angles, I use the double filet clamps. The set screw on standard clamps cold inhibit sharpening at acute angle for knives that are not wide (i.e. paring, filet knife).

^^^ This. I've gone below 8 degrees before on a wide blade that I was able to clamp well forward of the cylinder.

Yes i own the tsprof k03 knife makers kit and yes it certainly can sharpen to that angel it's one hell of a piece of kit there is four different versions of the k03 ranging from€440--€1300 i bought the one for €890 and it's really great but all four versions can sharpen to your desired angel
 
You need filet clamps to get that acute on filet knife, pen knife, narrow width knives
