Which model is this knife and what is it made of?

could be ATS 34
But they usually are marked by the logo with that.
 
The guy who sold me my bird beak steel heart said it was A2.

*that doesnt mean it is, it's just my 2 cents, which may not be worth 2 cents.
 
“AT S”ome point they transitioned to A2, between the Steel Heart and BBSHSH, whose to say there might not be a few A2 Steel Hearts or ATS-34 BBSHSHs floating out there made from left over steel.
 
How about putting a drop of lemon juice onto the edge somewhere, leave it for a few hours, then see if it starts rusting.

ATS-34 has 14% chromium, so it's officially considered stainless. It should not rust easily. A2 will start rusting pretty quick in this situation. Don't put salty water, as I think most stainless steels also rust in sea water, so you may not be able to differentiate.

If you watch it from time to time and stop the process before the rust pits deep, you should be able to clean it without leaving permanent marks onto the knife.
