I've had trouble with my 0562CF when re-profiling it on my EPA, when I sharpen at the heel of the blade it begins to cut into the blade-stops on both sides a bit. One less than another because they aren't evenly spaced from the handle. Any ideas on how to get a consistent bevel without cutting into the blade-stops? Should I be using the very small flat portion of the blade in front of the blade-stops as the resting place for the EPA or the primary "slicer" grind? Thoughts anyone?
EDIT: I figured that I should add that I was re-profiling the blade to 15 degrees per side @ 30 degrees inclusive.
