I have 2 kitchen utility knives I'd like to offer for sale tonight.
Both blades are made from .062" AEB-L stainless stock that has been heat treated with a targeted hardness of 62-63 HRC. The heat treat did include a 6 hr bath in LN2.
These were ground to close to 0 at the edge prior to sharpening and spine and choil are rounded for comfort. I think these will make a great addition to any kitchen.
OAL: 9 1/4"
BL: 5 1/8"
width at choil: 1.5"
Handles are made from Mexican royal ebony wood with black micarta pins.
