These knives were made by J. Neilson M.S. from industrial high carbon band-saw steel (15N20 or L-6). The first one I bought (The German-style chef's) at a show in Maryland off J's table. The second (gyuto) was an order. The third was also an order inspired by this thread.

All three have Cocobolo handles with quite a bit of color variation. The German-style chef's knife is a tank. It's .06'' wide at the spine and all the way down to the edge. I've done some bad things to this knife and it just keeps going. The gyuto and "guacamole" knife are thinned out quite a bit from spine to edge.
These knives are a lot of fun and see a lot of use in my kitchen. These are very reasonably priced IMHO and come from a great guy as well.
