Here’s my latest chef knife/wa gyuto.
The blade is made of my own laddered w’s damascus, consisting of 15n20 and CruForgeV steels. The handle is flame walnut and has an octagonal “wa” shape, with a slim feel and light taper. The ends of the handle are mortised and fit into the bolsters, and the bolsters are made from 410 stainless steel, hammer-textured, and heat-colored to suit the darkness of the blade and handle.
It’s a thin, veggie slicing machine!
Specs are as follows:
Overall length: 14-3/16”
Cutting edge length: 9-3/8”
Handle length: 4-3/4”
Spine thickness at bolster: .100”
Edge thickness before sharpening: .010”
Total weight: Just over 6-1/4 oz.
Blade width at heel: 2-1/16”
