Au Sabot knives from France

Ill go with custom vendetta for little more than au sabot,but nevertheless will get one or two au sabot knives in future.French traditional knives are awesome for edc,how do you guys find their sandvik 12c27,is it treated softer around 55rc or is taken to 58-9 rc?That alone makes big difference in edge holding.
 
I have an early Forge de Laguiole with 12C27, very hard to get sharp at first, but once she was she keeps a good edge, enough for dinners and lunches when traveling, plates are no good for edge keeping. More recent are much easier to sharpen and keep a good edge, though I don't really edc any of them (my other French edc is a Parapluie fish with a stunning XC75).
My comparison point is RR large sodbuster 440 or GEC's 1095 and it betters both of them imho.

The tortoissy one is a Masoptier from Jolipapa.
The only one I'd say has a flaw is the Pradel. The grind on the back is a little messed up.
Pradels and queues de poisson seem to be usually made with carbon blades.

Not by le Sabot, only olive wood, violette wood, gray (pressed) horn, in 5 sizes from 8 to 11cm, with or without screwdriver and punch. Lots of woods, but no horn for le Fidèle. :(
 
:) I 'm never tired seeing your climber! The workshop is only 70km away, and that's very tempting ...;) I think the components come mostly from Thiers.

The Pradel is a nice, simple, strong, compact design. I think mine's a 9 mm blade, just a little too long for my 3" jurisdiction.
 
Traditional knives cut way better than modern overbuilt designs that are too wide ,heavy ,scary looking to use in public and with some of these modern complicated grinds and thick blades .Too bad most traditionals are not widely available especially in N America and you have to order them online

Yes indeed. I want to buy the Au Sabot Pradel with violet wood from an online seller and having zero luck. I had one in the cart, but during checkout the seller apparently didn't ship to the US.
