One day rummaging around local restaurant supply store I bumped into the WinCo KSTK-80 Soft-Tek 8" chef knife at $15. I grabbed one to try it out. Typical online price runs in the $10-$15 range. Anybody else bumped into one (maybe in commercial setting), have experience with them, or have one at home?

Fresh from the package it was surprisingly sharp. Shoulder right at edge is quite thin which, coupled with fairly broad blade profile yielding shallow primary angle, makes it a decent slicer for being such a dang cheap kitchen tool. I haven't used it long or hard enough to determine edge longevity because I have too many similar size chef's knives I try to use as justification for the $$$ I spent buying them. 😉

Rubber inserts & general handle ergo's on the Soft-Tek knife make it comfortable in my fairly small hands. Rubber-ish material grips well & is secure when wet (no greasy use yet).

Anybody have other such hyper-cheap chef knives they've discovered that work well?
