My friend just came back from a SE Asia tour of two months (that rich bastid ;)) and I was invited to dinner. I couldn't stand the cutlery provided because I could actually see that it's as sharp as a butterknife, so I said that please excuse me and used my Endura instead. Hitting on ceramic plates and occasionally on the fork still leaves the knife on a workable edge (needs touchup). A few strokes on a ceramid rod it's back to normal.
The knife goes through the joint areas like nothing. Would cut through the ligaments and even small bits of bone no problem. Sure beats all the other people who are suck with the dull cutlery trying to eat ;)
God my dad would freak if I get a Spyderco Chef's knife! :p
