Gerber made a nice locking/folding fillet knife back in the day, may find one if you look around.
Google folding fillet knives, Buck makes them, I have a old Gerber that is awesome, back when Gerber was good.

The Dexter shown in the first image and even the outdoor amgler (plastic sheath shown in second photo) have done pretty well just wanting something custom to my liking and of higher quality.
Yes that's what I meant. Most people (like my dad) all they have is a steel, or stone, and have never used a convex edge.I put a convex edge / bevel with a WorkSharp on my Dexter's.
Is that what you meant.... Or a fully-convex fillet knife!?
