Fillet Knife suggestions?

Gerber made a nice locking/folding fillet knife back in the day, may find one if you look around.

Google folding fillet knives, Buck makes them, I have a old Gerber that is awesome, back when Gerber was good.

It's just getting Twilight Zone "doo doo doo doo" trippy with the similarities!!! :eek:
 
I have 3 fish filet knives in different sizes. I bought them all at Bass Pro/Cabelas. The fanciest one is a 7" birchwood handle S/S Rapala which cost $30 and the cheapest is a 6" 420 s/s Bass Pro branded knife that cost only $4. Also bought a 9" coated s/s Offshore Angler that cost $25. They all work fine and they cost so little that it doesn't much matter what I do with/to them.
 
If you want inexpensive, ugly quality, I'd go Victorinox/Fibrox/Forschner. Inexpensive to not hurt if it ends up at the bottom of a lake, flexible blades, many sizes, "restaurant grade."

Not at all sexy though.
 
Bark River makes some nice fishing knives in a variety of steels, including S35V. They have a larger and smaller Kalahari Sportsman. They are worth a look.

The Dexter shown in the first image and even the outdoor amgler (plastic sheath shown in second photo) have done pretty well just wanting something custom to my liking and of higher quality.

I use 7" and 8" Dexter knifes for virtually all of my fishing, from freshwater perch, to Yellowfin tuna, striped bass, lionfish, pike, etc.

I like a fillet knife like a scalpel.

I've put a good edge on it, but the stainless "Dexsteel" isn't the best at holding an edge.

Easy to sharpen and durable, utilitarian sheaths and inexpensive .

A buddy of mine has a fillet knife that has an adjustible length blade from like 6" to 9". Seems really useful .

I could live with JUST my BK-14 and a fillet knife . I'm used to using my fillet knives for virtually all food prep, when I travel for spearfishing trips. Add a Mora and Machete for added utility .

Any other leads on a magic stainless steel that will hold up to fish backbones / ribs AND a cutting board?
 
If you're only experience is stock Dexter steel, then you would be pleasantly impressed to use some of the custom knives with higher quality steel. AEBL is not hard to sharpen and will hold up very well at 63 RC. 35vn, CPM 154 also at that hardness, and others will handle bones well. Especially with a convex edge, which you won't find on a stock, store bought blade.. I have Dexter Boning knives for butchering and that led me to make my own in upgraded steel for that also.

Yes that's what I meant. Most people (like my dad) all they have is a steel, or stone, and have never used a convex edge.
 
Ive used my fair share and then some

Both the modern victorinox fibrox handled and the vintage Gerber Coho, to me, are the best at any price
