Folders A Gateway To Kitchen Cutlery?!

I'm an avid knife enthusiast (some may say obsessively so!) with a growing collection of modern folders, traditional knives, and a few highly prized fixed blades. But I have never given a whit about kitchen knives. They were just knife shaped objects to me. When I cook, I mostly use my own knives for food preparation. This beautiful Sunday morning I was minding my own business and decided to stop by the local cutlery store that specializes in kitchen cutlery and sharpening, but also has a few folders and fixed blades on hand which is what drew me in. I was woefully unprepared for what happened next. I innocently began to peruse some of the kitchen blades and asked the owner about the makers. Then the room began to spin and I felt like I was in a vortex. A little while later, the shop spat me out to the curb holding a couple of boxes wrapped in butcher paper. Got home and can't stop admiring the work of Yu Kurosaki. Please tell me this new vector for my little diversion will wear off...

This is one I’ve resisted (and will continue to, fingers crossed). My journey started opposite of yours 28 years ago with my first Henckels chef knife. Just picked up one from Robert Erickson too. So far, as good or better than my other German or Japanese blades.

Yea, thanks Scooter. Won’t be thinking about that stunning knife at all. Not a bit. And by “your journey started 28 years ago” you mean that eventually this new fixation fades, I assume.
No no...it shifted from the kitchen to the pockets. It doesn’t end my friend. Welcome.
 
A quality tool gives satisfaction when it is the right tool for the job. Whether it’s a screwdriver or a kitchen knife quality speaks to you. When something speaks to you, you should listen.

I got into nicer edc and fixed blades before I made the realization that the knives I use the most also had the worst quality and materials. You don't have to spend a fortune to get good kitchen cutlery.

I've got a set of esee/becker knives, a north arms trillium, and a cpk potato knife. I could conceivably get through my constant kitchen duties for the foreseeable future with just these. Upgraded steel on the later two is especially useful.

For me cooking is more than just the end result. Cuttting veggies is very relaxing almost therapeutic.

That is what a decent kitchen knife delivers. I don’t own any high end kitchen knives. But the ones I own are sharp.

I bought a nice set of Globals. It clicked one day that I was spending lots of money on pocket knives that would sit in my safe unused, while my kitchen knives that are actually used daily needed an upgrade.

Nice knives BTW.
 
I haven't bought any yet but I have wasted a lot of time looking

I don't really need a new blade to cut chicken or potatoes more finely

Might do it anyway tho

Wharn, I came to the same realization when I found myself in the kitchen cutlery vortex. I have many knives (and I use them), but we use kitchen knives constantly. Very happy to have these and will put them to years of good use.
