Folders A Gateway To Kitchen Cutlery?!

Opposite for me.
I've had nice kitchen knives before folders.

I got into nicer edc and fixed blades before I made the realization that the knives I use the most also had the worst quality and materials. You don't have to spend a fortune to get good kitchen cutlery.

I've got a set of esee/becker knives, a north arms trillium, and a cpk potato knife. I could conceivably get through my constant kitchen duties for the foreseeable future with just these. Upgraded steel on the later two is especially useful.

This exactly.

It dawned on me....I'm a working chef...I have so many pocket knives I can't even keep count....yet...

I had some big store brand bullcrap in my kitchen??

I'm so used to the turn and burn of the restaurant industry...knives don't stay sharp. Ease of maintenance > premium materials. At least in my case.

Bought myself a Victorinox set of kitchen knives as my daily driver at home. I've yet to find my "chef knife of chef knives." But, I'm working on it.

Victorinox makes stellar cutlery for the kitchen. Cheap too.

Thanks for the insight SS. Will definitely check it out. And agree on finding that ease of maintenance and daily driver goodness. I think I have plenty of learning to do before even contemplating a chef knife of chef knifes, but that's what makes this pursuit fun. So I will be a student on the forums and definitely look at the Victorinox.

You'll be hard pressed to find a cheaper/better set. Honestly, I'm not sure I'll ever evolve into a super expensive kitchen knife like I have with my EDC gear.

The kitchen is a hazardous place. I drop my knives, smack em into bone, cut for literally hours, exposed to all kinds of salt and acid. Not worth the anxiety with a $200+ blade.
