What are the advantages of a flat grind as opposed to the others. It doesn't seem as though it would cut as well as a symmetrical grind.

I think what you are calling a "flat grind" is what we call a chisel grind, unground on one side and generally full flat or sabre ground on the other. What we call a flat grind is one where the blade is ground with no curvature in (hollow ground) or out (convex ground).
