How do you test the sharpness of your knife when you get it?

These days, in Canada, we test our blades on convicted criminals and captured military prisoners. We tie them to frames or stake them down to mounds of sand and and perform a series of cuts across the abdomen and down through flesh, bone and sinew.

... Oh wait... that was centuries ago... and it was Feudal Japan, not Canada... my bad.

We slice peameal bacon, shave the labels off of beer bottles and cut the little pom-poms from newly purchased toques.... yeah... thats about it.
