How to know a custom from a production model?

I’m kinda late to the game with the Demko knives but recently acquired a carbon fiber handled AD20 that was made in Taiwan and love it. My question relates to searching up other models and not knowing what is a production model or a custom made one. I’ve seen some listed as “custom shop” also and wondered where these fall. I’d really appreciate any explanation anyone could provide so I know what I’m seeing out there. Thanks in advance. Here’s pics of my carbon fiber cause pics are fun😎

I’m not sure if it’s the angle or what but those AD20’s only look slightly bigger than the AD20.5. I thought they were quite a bit bigger?
 
The AD 20.5 and Shark Cub are made in Taiwan. For the AD20 series there is either AD20MG (machine ground) or AD20HG (hand ground by Andrew Demko) The AD20MG is what would be referred to as a “mid tech”. The AD20MG and AD20HG are both made in house at our shop.
Last there is the full custom knives. They typically start around $2k and up.
