Recommendation? Iconic American fixed blades

I have three of those filleting knives myself.

I’m thinking about shortening one about an inch and round tipping it for deer processing.

What kind of fish is that?
I use these filet knives for deer all the time. Hard to argue with that thin geometry!

The fish are a salt water tang. We call them Kole. Super good fried in oil with sea salt. Very buttery, white flake meat.

So I just ordered a 119 special following the general recommendations of this thread. 👍😊

It’s about $100 over here so only about $30 penalty for living on the wrong side of the pond 😂
