I don't know what to name this other than it is a good general use blade for the kitchen. I forged the blade from 52100 high carbon steel to about 1/8 inch thick at the spine near the handle and tapered it to the tip and edge; a thin cutting edge making it a real slicer. The blade is heat treated to Rc58-60 which gives it fine edge holding and is easily resharpened with a few swipes on a butchers steel. The handle is stabilized and dyed figured maple which is dishwater safe but please, never in the dishwasher ( or any knife for that matter). I sculpted the handle with a palm swell which is very comfortable in my average size hand.
9 3/4 overall with a 5 1/4 inch blade.
