SHARPENING KIT FOR SYMMETRIC HONING OF KNIVES
KMFS® sharpener
1. Introduction
Congratulations on your purchase of the KMFS sharpener! We wish you a lot
of fun in sharpening and great performance from your knives. This user
manual is intended primarily to familiarize you with the sharpening system
and provide recommendations that can facilitate working with it.
The sharpening system is produced exclusively in the Czech Republic from
premium materials. Each set is hand-finished and assembled with the utmost
detail for you, because we believe that only top-quality premium products
can lead to the perfect result of sharpening your knives.
All the information (including contact details) in this manual corresponds
to the state at the time of printing this user manual. In case of loss or
updating of the manual, this manual can be downloaded freely at

2. General instructions
The sharpening system is designed for honing all types of knives with straight, plain-edge blade type, not for use with serrated blades.
The maximum thickness of knife blade that can be used with the supplied clamping screws is 6mm (approximately ¼”).
Sharpening stones should be used dry, do not use water or any other lubricant.
• Clean the kit only with a dry cloth. The kit is designed and built as maintenance-free.
Diamond grinding stones are capable of sharpening all knife materials - metal and knives made of advanced ceramics.
3. Important Notices
Keep in mind that knife sharpening is inherently risky. Avoid making contact with the edge of the blade when setting up and using the sharpener.
• Never leave the knife unattended.
The blade at the end of honing gets very sharp, keep this in mind to prevent injuries. Be careful!

5. Workflow
Remove individual parts of the system from the briefcase, the abrasive
stones can be placed under the bottom foam.
Place the sharpening jig on the edge of the work table so that the clamping
hole (in the blue cube on the underside of the blade clamp) is pointing
toward you.
Put the c-clamp into the clamping hole and use the plastic wheel to tighten
the c-clamp so that the jig is firmly fixed to the table and does not move.
Using the Allen key, loosen the upper screw on the blade clamp so that the
gap in the clamp is larger than the blade thickness you are about to grind.
Insert the knife into the blade clamp so that the blade is pointing upward
and the knife tip is away from you. Do not put the knife too deeply in to
the clamp. Keep shorter blades clamped as close as possible to the handle.
The clamp should be placed towards the middle of longer blades. Lightly
tighten the upper bolt clockwise.
Now tighten the lower blade clamp screw counterclockwise so that the blade
is held firmly and cannot move relative to the clamp. The lower blade clamp
screw is accessible through the hole on the right hand side, under the
upper clamp screw.
Now insert the two abrasive stones with the lowest number (the coarsest
stones) into the stone carriers. You should use two stones with the same
grit value.
Press the flap on the stone carrier and insert the grinding stone and
release the flap. The stone will now be firmly fixed.
Set the desired sharpening angle: by turning the blue knobs, you can either
increase or decrease the angle. The horizontal shaft is contra-threaded, so
adjusting either knob changes the sharpening angle on both sides by the
same amount. With every single revolution of the adjustment knobs, a sprung
detente latch automatically secures the angle setting. You can keep the
preset sharpening angle from the manufacturer or adjust it as needed. The
angle gauge is attached to the right movement screw as shown: the left side
is at the beginning of the thread, the right side of the gauge on the left
side of the brass bearing. The approximate angle is etched beside the
vertical surface in contact with the bearing. The actual angle will vary
depending on the depth of the blade being sharpened.
Place the base of one stone in contact with the heel of the blade. Now draw
the stone down, while at the same time moving the stone towards the tip of
the blade. Then, repeat this motion on the other side of the blade with the
second stone. Alternatively – or when sharpening a long blade – you may
prefer to move the stone up and down while gradually moving towards the
tip. In either case, you now continue to sharpen the knife by alternately
stroking each side of the blade with the stones, in order to keep the bevel
equal on both sides.
Be very careful to hold the stone carriers in such a way that your fingers
are kept clear of the knife edge.
Do not finish with the coarsest stone until the scratch pattern from the
abrasives reaches the apex of the cutting edge. For better visibility, we
recommend colouring the blade with a black marker. As you sharpen, the ink
will be removed from the blade. Once you have an even scratch pattern, and
all the ink has been removed right up to the edge of the blade on both
sides, you can finish with the coarse stones.
Fit the next finest stones (higher grit number). Using the same grinding
method, alternate between the sides of the blade as before. The aim is to
remove the rough marks from the coarse stones, replacing them with finer
scratches. Again, this can be clearly seen by marking the edge with ink.
Once all the ink has been removed, this indicates that the high points on
the edge have been worn away, so the scratches are no longer deep.
Now insert the stone with the highest grit number: the finest stone. Continue to grind the blade, alternating between the sides as usual. Again, you want to entirely remove the scratch pattern from the previous stone, and replace it with finer pattern from the current stone. As before, we also want the new scratch pattern to run right to the very edge of the blade.
Now you should achieve a fine edge with great sharpness.
Carefully release the knife from the blade clamp by turning the lower clamp bolt clockwise and put the knife in a safe place.
6. Maintenance and features
Cleaning and care
The sharpening system is designed and manufactured as maintenance-free, only dry cloth or brush cleaning is recommended after each use.

The universal joint at the base of the guide rods has been designed to minimise the change of bevel angle that can occur at the tip of the blade when using other guided sharpening jigs.
