Hello, I need a few recommendations for some good kitchen knives in hap40. I prefer the western style but would consider others. I also prefer a double bevel. Also money is a factor as I'm retired now on a fixed income.

I'll probably start with a paring or utility knife then add from there as funds are available.

I'm having trouble finding many options for this steel, is this because it's relatively new or are there other reasons for this? I have saw the ones on CKTG but was wondering if there were any other options.

Thanks

I guess I'll be getting the Kohetsu in Hap40 as I cant really find anything else in the western style. I'll be staying under 200.00

That's probably your best bet. In that price range there are "allegedly Hap40" knives coming out of China but I would stay clear of them. The actual steel used has been a discussion issue on some forums.
Knifewear in Canada does offer a Hap40 Damascus they have made in Seki under their "Mugen" house brand but the price is way up there. All the rest, while very good knives, seem to be traditional Japanese handles.
